Recipe For Coconut Rice: Heat coconut oil in a pan. Add mustard seeds, urad dal, green chillies, dried red chillies, ginger, garam masala, and grated coconut. Saute them gently. Then add salt, turmeric, coriander, roasted peanuts, and sugar. Next, add the pre-cooked and drained rice. Mix well. Make sure not to overcook the rice, this helps maintain the texture of coconut rice. (News18 Tamil)

Also, do not fry the coconut for too long, or it will lose its natural sweetness. Once the grated coconut blends well with the rice, your flavourful Kumbakonam-style coconut rice is ready. The combination of sugar and roasted peanuts gives this version a distinct and rich taste. (News18 Tamil)

Recipe For Tamarind Paste: To prepare the tamarind paste, grind grated coconut in a mixie jar until it’s about 80% ground. Add dried red chillies, a lemon-sized ball of tamarind, salt, and turmeric powder. Blend into a thick paste without adding water. This tangy tamarind paste pairs beautifully with coconut rice and takes the overall flavour to a whole new level. (News18 Tamil)
